Tracking stop while change routing

My typical scenario is to put in the name of a town on the map, generate a curvy route to get there, and go. Once at that town, I pick a new destination, and repeat until I’m ready to head home. It’d be great to log the whole outing as a single ride, but the current format forces me to finish the ride at the end of each routing location.

You can't add whole routes during a navigation session, but you cán add locations to a running navigation session. Simply drag the map while in navigation mode... you'll got to edit mode. Now you can add locations, search for places or touch the map to where you want to go next... and add that point as a stop to the route.

Ah yes...that's true. This only works when selecting a route for navigation (a route you created / imported through the routes tab) and if you select a location in main screen but leave routing to short/fast/efficient.
btw. you can also create curvy routes and round trips through routes tab > create route. If you do it like that, save that route and then select it for navigation you will get the option to edit during navigation.
